Barrel & Bloom Honey

Barrel & Bloom Honey reflects the harmony of nature and craft:

Nature: Our bees gather nectar from blossoms to create honey rich in character.  

Craft: We then age our honey in charred American oak barrels once used for fine spirits, allowing it to gently absorb subtle nuances from the charred oak and essence of the spirits creating notes of warmth, depth, and character that make every small batch unlike any other. 

Each of our hives has its own story, written in nectar and blossoms. Every barrel whispers its history, from the fire that charred it to the spirits that once rested inside. Together, they create honey that provides a symphony of unique flavors.

We keep our process as pure as the bees intended. Our raw honey is never heated and minimally filtered, preserving its living enzymes, nutrients, and the rich variety of floral flavors from the hive.  There is no alcohol in our honey, just the essences left behind in the barrels.

Barrel & Bloom Honey’s Signature Maple Bourbon flavor is both comforting and bold. We age small

batches of raw honey for 60-90 days in 5-gallon barrels that once held maple syrup and bourbon, allowing the honey to absorb rich, layered flavors. The result is a smooth, luxurious honey revealing deep layers of caramelized maple, gentle vanilla, and a whisper of barrel-aged bourbon.

Barrel & Bloom Honey’s Barrel Reserve Collection is where honey meets adventure. Aged 30–60 days in smaller, 2.5-gallon barrels previously used for a variety of spirits, these batches develop unique flavors. The smaller barrels allow more honey to touch the oak, encouraging gentle oxidation and deeper flavor absorption. Each batch creates its own melody of flavor notes, yielding honey with a character as bold and distinctive as its barrel.

Aged in peach brandy barrels, this honey captures the sun-kissed sweetness of ripe peaches, gently enriched by the warmth of the aged brandy. Notes of toasted oak and soft spice add depth, finishing with a smooth, velvety richness.

Aged in cherry brandy barrels, this honey absorbs the warm, juicy essence of ripe cherries,

complemented by subtle hints of brandy. Layers of soft fruitiness, delicate oak, and a silky finish make it uniquely complex and satisfying.

Aged in rum barrels, this honey takes on the rich, warm sweetness of aged rum, with notes of

molasses, caramel, and a hint of spice, creating a smooth, indulgent flavor.
